Drink it now or cellar for up to 10 years. No need to decant, but best to open it half an hour before service. Marjan Simčič is a family-run organic winery located in the Slovenian Collio (Brda). Its vineyards extend between Slovenia and Italy. Here Marjan, a descendant of Jozef who founded the company in 1860, produces excellent quality wines thanks to the typical soils of these hills and meticulous (and mostly manual) work in the vineyard and cellar. The Chardonnay grapes are selected and harvested manually from approximately 40-year-old vines, grown organically and located on the limestone hills of Collio, which enjoy southeast exposure. After the harvest, fermentation occurs spontaneously in oak barrels with maceration on the skins. The finished wine then remains for approximately 2 years in large oak barrels (30% new) and then a further 4 months in the bottle. Opoka Chardonnay has an intense golden yellow color with reflections tending towards amber. The nose is rich and intense, ripe and fragrant with aromas of dried fruit and honey, melted butter, and sweet spices. There are also mineral hints that return on the palate. It is a powerful and velvety wine with good acidity and a marked savory streak. It's fresh and persistent. Excellent with mushroom risotto, white meat, and medium-aged cheeses.

Located between the Slovenian Brda and the Friulian Collio, Marjan Simcic is a talented winemaker who in 1988 took over the family winery founded in 1860. Today the company produces three lines of wines: the Brda Classic from the youngest vineyards, the Cru Selection line from the oldest vineyards, and the Opoka line made in the best vintages. This extraordinary example of Slovenian Ribolla Gialla is produced with grapes from over seventy-year-old vines located in the Medana Jama Cru vineyard in Brda at an altitude of about 140-160 meters on soils with a particular composition of marl and sandstone locally called opaka. After manual harvesting, the grapes are fermented in concrete vats with the skins. The finished wine then rests for about 20 months in wood. The result is an elegant, characterful, and complex wine that reveals excellent aging potential. Marjan Simcic Ribolla Opoka has an intense and clear color with golden tones and an expressive aromatic profile with notes of stone fruit, orange blossom, and wild herbs followed by delicate spicy hints. On the palate, it reveals a pleasant mineral vein and a fresh and balanced character. It is lively and savory, intense and concentrated with a long refreshing finish. It is excellent with smoked trout, eggs with truffles, and basically with all shellfish.

Drink it now or cellar for up to 20 years. It is recommended to decant it for an hour. Located in the Slovenian Collio, on the border with Italy, Marjan Simčič is a family winery whose origins date back to 1860. The company owns approximately 20 hectares of vineyards, distributed between the Slovenian and Italian sides. The wine is produced with 100% Merlot grapes (the same clone used at Chateau Petrus), selected and harvested manually in the Trobno cru, in the Slovenian Brda region. The vineyards, which are approximately 40 years old, are located at an altitude of approximately 130 meters and enjoy a soil made up of marl (locally called Opoka) and a south-east exposure in ventilated conditions. Fermentation occurs spontaneously and the finished wine rests in oak barrels (30% of which are new) for 48 months, before being bottled and resting for another 4 months. The wine has a deep and brilliant color, with ruby-red tones and violet reflections. Its aromatic profile reveals elegant fruity notes of dark cherries, mulberry, and blackberries with hints of candied citrus peel, coffee, and vanilla. On the palate, it is juicy with a strong and well-balanced acidity. It is concentrated and round, with fine and well-integrated tannins. The finish is warm and recalls notes of cocoa. It is a harmonious wine, ready to drink now paired with a beef brisket, but can be left in the cellar for several years.
