Champagne Blanc de blancs

Drink it now or cellar for up to 15 years. No need to decant. The Mandois Champagne House was founded in 1862 by Victor Mandois, using vineyards purchased by his great-grandfather Jean in 1735. Today, this family business owns around 40 hectares of vineyards located in the Epernay and in the Sezannais area, where the cultivation focuses mainly on Chardonnay. The cellars, which date back to the 17th century, are located under the church of Pierry. The Chardonnay grapes are harvested manually from different vineyards of the Côte des Blancs and Epernay, specifically from Chouilly, Vertus, and Pierry. The vinification takes place 80% in steel tanks and 20% in oak barrels, to preserve the fruity character and delicate flavors of this splendid Blanc de Blancs. The dosage is low and the wine rests for about 4 years in the cellar on its lees, before disgorgement. Champagne Mandois Blanc de Blancs Premier Cru reveals a brilliant color with golden tones and a fine and persistent perlage. Its aromatic profile is fresh and broad with floral and fruity notes and hints of brioche. On the palate it is broad and complex, balanced and refreshing. The bubbles create a pleasant and velvety texture and the finish is long and slightly salty. It is excellent with smoked salmon or trout, with seafood and fresh cheese.
